Blue Zone Dinner – Eating like the Centenarians

Blue Zones – these are five regions of the world that are known for their healthy way of living, connection to nature and the high life expectancy of their inhabitants. Vitra Campus Catering invites you to immerse yourself in five culinary secrets from these Blue Zones.
At the exclusive Blue Zone Dinner with Estella Schweizer, one of Germany's most renowned vegan chefs, we will take you on an enjoyable and informative journey through the cuisines of the five regions. Inspired by the diet of the centenarians, we will serve you dishes based on regional ingredients from the Black Forest – freshly prepared, rich in nutrients and with natural ingredients full of phytochemicals that are good for the heart, revitalise our spirit and protect our cells.
An evening that combines enjoyment and sustainability – for your well-being and that of our environment.
The event will be held from 6.30 to 10pm in Vitra's stylish company cafeteria. The meeting point is at 6.15pm in front of the Vitra Campus Gatehouse (North Campus).
The evening is alcohol-free and vegan. The ticket price includes:
Aperitif trio and talk
Mini wholemeal bruschetta with cannellini bean and rosemary cream and braised apple (Italy)
Cornbread mini-muffin with pea guacamole and soybean topping (California)
Appetiser surprise (probably dolmas with regional grape leaves ... etc.) (Ikaria, Greece))
Beverage pairing: non-alcoholic sparkling apple cider with bitter lemon and red currant cordial
Starter
Black Forest miso soup with winter root vegetables, umami tempeh skewers and fresh sprouts (Japan Black Forest Fusion)
Beverage pairing: green tea with rosemary, cucumber and honey
Main course
Bowl with sesame kale, sweet potato cubes with chilli, hearty sweet-and-spicy black beans, fried plantains and banana BBQ sauce (Nicoya),
served with homemade tortillas (Costa Rica)
Beverage: non-alcoholic red wine with almond, lemon and tonic water
Dessert
Chestnut panna cotta with plums and cinnamon (Italy)
Beverage pairing: plum with kombucha, lime and rosemary
